Dad's Old Fashioned Toasted Tomato Sandwich Made Healthier

Fathers day has got me thinking about my dad.  In the summer he use to make toasted tomato sandwiches with the tomatoes from his garden.  He just loved them.

If cancer did not take my dad, I would share all that I have learned about healthy food switches with him.  I would teach him through my recipes.  I would start with something simple like his fav toasted tomato sandwich.  I would say dad try these heathy switches the next time you make your toasted tomato sandwich...

  • Make it with Ezekiel bread instead of whole wheat bread or white bread
  • Make it with avocado instead of mayonnaise or margarine
  • Make it with Himalayan salt instead of that "No Salt" substitute or table salt
  • Add some fresh herbs on top for some added flavour and the added health benefits of course

I know that getting him to eat avocado and Ezekiel bread would have been a tough sell.  And I know he would have wanted to stick with his "No salt" instead of using Himalayan salt.

This is what I would tell him...

Why avocado?

When you eat food you can either add to your health or take away from your health. Eating mayonnaise or margarine takes away from your health and avocado adds to your health.

Why Himalayan salt?

Go with foods that are in their natural state. Himalayan salt contains 84 minerals, its been left in its natural state. Table salt has had all of the healthy benefits destroyed and that "No Salt" substitute that you have been using its just a bunch of chemicals, its not food.

Why Ezekiel Bread and what the heck is it?  

Ezekiel bread is a much healthier option. I use Food for Life's Ezekiel bread because its organic and its made with freshly sprouted grains. 

I would ask dad to go to his cupboard and grab his bread and we would compare the ingredients on the labels. These are the ingredients on the label of my Food for Life Ezekiel bread:

Organic Sprouted Wheat, Filtered Water, Organic Sprouted Barley, Organic Sprouted Millet, Organic Malted Barley, Organic Sprouted Lentils, Organic Sprouted Soybeans, Organic Sprouted Spelt, Fresh Yeast, Organic Wheat Gluten, Sea Salt.

Then it would be dad's turn.  

I would ask him...do you see any chemical type ingredients or sugar/glucose-fructose on your bread label?  Is the word organic anywhere on your bread label? 

And then I would hope it would be a light bulb moment for him and he would be curious about other foods he was eating and start reading labels all of the time.

I would give him a challenge.  The next time you buy bread, try Ezekiel bread instead.  And then of course the price thing would come up. Dad was sooooo into saving money.  I would explain to him, yes Ezekiel bread costs way more then most breads. Then I would say dad your health and how you feel is worth it... right.

And then once dad got use to these healthy switches for his toasted tomato sandwich, I would take his next favourite thing and do the same. 

You can do this too, I challenge you to take something you love eating and start reading labels, start switching up the ingredients in your favourite recipes and get experimenting in your kitchen.

Dad's Old Fashioned Toasted Tomato Sandwich Made Healthier Recipe

Serves: 1

What You Need

  • 1 piece of Ezekiel bread
  • 1/2 of a perfectly ripe avocado
  • A handful of of cherry tomatoes or 1 tomato
  • Fresh herbs for sprinkling on top (I used cilantro)
  • Himalayan salt (or sea salt)

    What To Do

    (1) Toast the bread.

    (2) Slice open the avocado and scoop out half of it onto the toast and then smash the avocado with the back of your fork.

    (3) Sprinkle on some Himalayan salt and top with tomato and and some fresh herbs.

    Notes: 

    Ezekiel bread can be hard to find, its not sitting on the shelf along with the other breads.  We get our Ezekiel bread in the freezer section in our local health food store or in the healthy/natural row our local large chain grocery store.
