What do you do when you are hungry and you have 10 minutes to eat and you have leftover baked beans in the fridge? Well you make a smashed baked bean avocado sandwich of course.
I know, I know this sandwich may seem a little weird if you are use to eating the regular type of sandwich with lunch meat and cheese. But stick with me here...there is another way to enjoy sandwiches with just a few healthy switches.
Why baked beans?
Baked beans are a great protein option and when you make your own you know exactly whats in them. We make homemade Mexican Baked Beans in the slow cooker at least once a month and then freeze the leftovers so we always have them on hand. They taste so delicious in a sandwich!
We always keep fresh avocado in our pantry, its really become our replacement for cheese. We feel lighter and have more energy when we eat avocado. We had our first avocado about 8 years ago when we took our first trip to California. In California avocados seemed to be everywhere.
Have you every tried avocado in your meal instead of cheese? If not the next time your are out grocery shopping pick one up and try it. Your gonna love it. Confession, we get really excited when we slice open avocado and its perfectly ripe, yessss we do.
Why Ezekiel Bread and what the heck is it?
Ezekiel bread is made with super good ingredients. We use Food for Life's Ezekiel bread because its organic, its made with freshly sprouted grains and contains absolutely no flour.

Smashed Baked Bean Avocado Sandwich on Ezekiel Bread Recipe
Serves: makes 1 serving
What You Need
- A couple of spoon fulls of Mexican Baked Beans (or any other baked bean that you like)
- 1/2 ripe avocado
- 1 pickle
- 2 tomatos slices
- 2 slices of Ezekiel bread (we used sesame for this sandwich)
What To Do
(1) Toast the bread.
(2) Smash the baked beans with the back of a fork on a small plate, slice open the avocado and scoop out half of it.
(3) Top with tomato and enjoy!
