These are good, really, really good. I love making a healthier version of my favourite foods. When this happens I am in my happy place.
And bonus, chocolate is good for you. Chocolate made with clean ingredients like cacao powder that is. Cacao powder is a high source of antioxidants and rich in minerals like magnesium, iron and potassium.
Good to know, right.
I recipe tested this recipe at least 5 times, tweaking it along the way and its ready for you. Its seriously so simple to make.
Here we go...
Melt coconut oil, maple syrup, coconut butter in a small pot on the stove on low heat (your not cooking the mixture, your just melting it).
Once its melted add in the cacao powder and stir for about 5 minutes.
Turn off the heat and add the vanilla and Himalayan salt sole (or Himalayan salt).
Pour just enough chocolate to cover the bottom of each muffin cups with a thin layer.
I used silicon muffin cups so it was easy to pop the peanut butter cups out.
Freeze for 15 minutes so the chocolate can harden.
Scoop about a 1/2 tablespoon or so of peanut butter into each muffin cup. Hey these are your peanut butter cups so put as much as you like, you can't go wrong.
Pour the remaining half of chocolate on top of the peanut butter and freeze again for about 20 minutes before eating. Make sure you lick that spoon when you are done, its so delicious.

Guilt-Free Dark Chocolate Peanut Butter Cup Recipe

Makes: 12 (muffin cup sized) peanut butter cups
What You Need
- 1/2 cup coconut oil
- 1/4 cup 100% pure maple syrup
- 2 tablespoons coconut butter
- 2/3 cup cacao powder
- 1 teaspoon pure vanilla
- 1/8 teaspoon Himalayan salt sole (or 1/4 Himalayan salt)
- 6 - 8 tablespoons organic natural peanut butter
What To Do

Notes:
Customize - You can switch the peanut butter in this recipe with any other nut butter. I also tried making it with a hazelnut almond butter combination it was delicious.
Recipe inspiration - This recipe has been adapted from Joyous Health - Strawberry Almond Butter Chocolate Cups. I modified the flavour by adding some of my favourites; pure vanilla, coconut butter and Himalayan salt sole. I switched up the almond butter for organic peanut butter.
