A healthy chocolate almond bark, is that possible? Yep, you bet.  All healthy ingredients, no packaged chocolate here!

We use to buy chocolate covered almonds all the time. When we were in line at the grocery store we would buy them every time, you know the ones right at the checkout.  We would say "almonds are good for you right, lets get'em".

After eating them we would usually feel drained. We were missing the fact that there were chemicals in the chocolate almonds that we were buying...not so good.  

Now it's super easy for us to leave the chocolate covered almonds on the shelf at the grocery store and get creative at home making our own treats!

    This recipe is perfect for making on special occasions like Christmas, Valentines day and Easter, when there is usually a lot of chocolate being shared. So delicious, and healthy!  We won't be going back to store bought chocolate covered almonds!

    First, roast the almonds.

    An optional step...brush on Himalayan salt sole before you roast the almonds.  Its ok to skip this step if you don't have any, they still turn out great.

    Add the coconut oil, coconut butter, raw honey, pure maple syrup and pure peppermint essential oil in a small bowl or glass measuring cup.  If you did not brush on Himalayan salt sole before roasting the almonds you can add a pinch of Himalayan salt.

    Stir until combined.

    We love using pure peppermint essential oil in our recipes when ever we can.  Our top 3 favourite benefits of peppermint oil are:  boosts energy, improves mental focus, good for digestion.

    To get the ingredients to mix together easier, I like to make a water bath.

    Add in the cacao powder and stir until smooth and voila you just made some healthy peppermint chocolate!

    Now this seems like a good time for a chocolate tip. Have you ever wondered what the difference is between Cacao powder and Cocoa powder?

    Stir in the almonds.

    Spoon the mixture onto a parchment lined pan or container and smooth out. Sprinkle the chopped almonds on top.  Put in the freezer to set.


    What You Need

    • 1 1/4 cup raw almonds
    • 1 teaspoon Himalayan salt sole or a pinch of Himalayan salt (or sea salt)
    • 1/4 cup coconut oil
    • 1/4 cup coconut butter
    • 1/4 cup raw honey
    • 1/4 cup 100% pure maple syrup
    • 1/2 cup raw cacao powder
    • 3 drops pure peppermint essential oil

    Optional

    • 1/4 cup raisins or dried cranberries (its optional but if you like chewy things throw some of these in)     

    What To Do

    Roast the almonds  oven icon

    (1) Spread the almonds on a baking sheet.

    (2) Optional - brush on Himalayan salt sole, a little goes a very long way.  

    (3) Bake at 300 degrees for about 15 minutes.  If you prefer the nuts to be crunchier you can leave them in the oven longer.  

    (4) Once cooled chop 1/4 cup of the nuts (for sprinkling on top).

    (5) Add the coconut oil, coconut butter, raw honey, pure maple syrup and pure peppermint essential oil in a small bowl or glass measuring cup and stir until combined.  Add a pinch of Himalayan salt, you can skip this if you brushed Himalayan salt sole on the almonds.  To get the ingredients to mix together easier, I like to make a water bath.

    (6) Add in the raw cacao powder and stir until smooth.

    (7) Stir in the almonds, spoon the mixture onto a parchment lined pan or container and smooth out.  You can also throw in some raisins or dried cranberries if you like. Sprinkle the chopped almonds on top.  

    (8) Put it in the freezer on a flat surface for about 20 minutes or until is set.

    (9) Break apart into bark pieces.  Keep it in the freezer until you are ready to eat it.  If you leave it in the fridge it will start to soften, if you leave it out on the counter for a long time it will start to soften (or melt)
